Chili Con Carne Recipe

A few of you asked me for my world famous chili recipe. This one serves 4 (and rather well!). I often double the recipe and freeze in single servings as it freezes beautifully and the flavour gets even more intense.
Ingredients:
2 cups lean minced beef
1 cup dried kidney beans
or 2 cups if canned.
1 onion, chopped
2 sticks celery, chopped.
2 large carrots, sliced very thin
1 large can crushed tomatoes.
2 tbls chili powder - cut back on this if you don't want it too kicky.
1 tsp of smoked paprika - this makes all the difference.
1 dash of Maggi Seasoning
Soak beans overnight if dried and rinse well before using.
Brown meat along with onion in large pot. Throw in everything else. Stir well. Cover and simmer for as long as you can. 5 hours is good.
Serve with a dollop of sour cream on top or some shredded sharp cheddar, with nachoes or brown soda bread or mashed potatoes.

ReplyDeleteOk, that's a keeper. Maybe even this weekend, depending on how hot it is around here. We seem to have hit a cool stretch - mid 20s today so if that persists, then I'll give it a go. One question, what is Maggi seasoning? Not being a cook of any real ability, some of this stuff is completely foreign to me. Thanks wild web woman! :-)

ReplyDeleteIt comes in a bottle, keep it in the fridge once open, usually in the gourmet section of regular grocery stores - sometimes with the ketchup :)
Great to add to soups, pot roasts, even salads.
